Attention Pizza Lovers

WOOOOOOOOEEEEEE......Ya'll, it has been a minute since I've come in here!


You know the drill, life gets busy, so you evaluate your priorities and change it up. Unfortunately, I decided I didn't have time to write and goodness have I missed it! So I'm going to be coming at you with all kinds of content the next few weeks!


I made a post a few weeks ago sharing my dinner and people went NUTS asking for the recipe.


So, here we go....Pizza Stuffed Chicken Breast....it's simple, but I promise it'll step up your street cred with your kids or whoever you enjoy cooking for!





Pizza Stuffed Chicken Breast

Ingredients:

- 4-6 chicken breast

-panko bread crumbs

-Parmesan cheese

-onion and garlic powder

-mozzarella cheese

-pepperoni

-marinara sauce


1. Create a mixture of bread crumbs, Parmesan cheese, onion powder and garlic powder (seasoning to your preference) and place on a paper plate (for easy clean up).


2. Butterfly the chicken breast and tenderize. Pat dry off the juices and then wet the outside with water. (You can also use an egg, but I skipped b/c I didn't have any and it worked fine).


3. Pat down outside of the chicken breast in bread crumb mixture.


4. Add cheese and pepperoni to one side of the butterflied breast and fold over.


5. Sear in a hot skillet with oil for 3-4 minutes on each side.


6. Place in a greased baking dish and top with marinara sauce and more cheese.


7. Bake uncovered at 400 for 25-35 minutes, until chicken is cooked through.



It's easy and delicious! You could also stuff the inside with veggies to make it a supreme, but I didn't feel this was necessary! We paired ours with whole grain spaghetti and veggies!
