Salt Creek Chicken

For 9 years of my life, I waitressed at a local restaurant in my hometown. I stinking LOVED it! I love talking to people and I seriously loved getting to wait on people. Those waitressing nightmares were NO JOKE, though!
I still groan when people suggest going there to eat because after 9 years and working 5 days a week, I had tried everything on the menu over and over. I'm still burnt out and it's been 6 years since I've worked there! Don't get me wrong, the food is amazing and the price can't be beat...I've just had it a lot!
One of my favorite dishes there was something called "Salt Creek Chicken". It was a chicken breast smothered in mushrooms, onions, and cheese. I had been craving it lately, so I decided to make my own version--hold the mushrooms! I'm choosing to share with you all because it is for real one of my new favorite dishes to make!

Salt Creek Chicken
chicken breast
one sliced onion
mushrooms
butter or olive oil
Colby jack cheese
mrs. dash of choice
1. Sauté sliced onion and mushrooms in skillet with butter on medium until onion is caramelized.
2. As veggies are cooking, pound down chicken breast. (I literally just sandwich the chicken between wax paper and beat it with a rolling pin haha)
3. Remove onion and set aside.
4. Place chicken in skillet with butter or olive oil on medium low and season with salt, pepper, and/or Mrs. Dash. Cook until done (about 20 minutes).
5. Add veggie mix to top of chicken, and smother in Colby jack cheese. Cover and let cheese melt for about 5 minutes.
It's soooooo good, y'all! I pair it with rice and asparagus!
